چکیده

Please cite this article in press as: Latif, S., & j.foodchem.2010.09.064 In the present work we evaluated five enzyme-mixtures (Protex 7L, Alcalase 2.4L, Viscozyme L, Natuzyme, and Kemzyme) for their effectiveness in extracting the oil and protein recovery from sesame seeds during an enzyme-assisted aqueous extraction (EAAE) process. Alcalase 2.4L was found to be the best for attaining a high oil yield (57.4% of the total oil content in the seed), whereas, the maximum amount of protein (87.1% of the total seed protein), was recovered in the aqueous phase with Protex 7L. The quality attributes such as fatty acids profile, density, refractive index, free fatty acid contents, iodine value, colour, saponification number and unsaponifiable matter of the sesame oil, extracted by aqueous enzymatic process, were comparable with that of the control (oil extracted without enzyme treatment) and hexaneextracted oil (HEO), revealing no significant (p > 0.05) variations among oils, produced by either of the methods. The oxidative stability state of the enzyme-extracted oil (EEO) was noted to be considerably improved relative to the control and HEO. The amount of tocopherols for the oils, produced by the enzyme–adjuvant was found to be higher than the control and HEO. An appreciable increase in the antioxidant activity as assessed by determinations of total phenolic contents, DPPH radical scavenging capacity, and inhibition of linoleic acid oxidation of EEO was also established. Overall, the present results revealed improvement in the quality of the EEO while a major portion of the food grade protein was also extracted in the aqueous phase. 2010 Elsevier Ltd. Application of the Response Surface Methodology for the Optimization of the Aqueous Enzymatic Extraction of Pistacia Khinjuk Oil

ABSTRACT: Aqueous enzymatic extraction of oil from pistacia khinjuk was performed using cellulase. The central composite design was used to optimize the parameters that are significant to the process. The influence of three regressors on the percentage of oil recovery from seed was evaluated using second-order polynomial multiple regression model. Analysis of variance showed a high coefficient ...

Methods Used for Extraction of Maize (zea Mays, L.) Germ Oil-a Review

Maize oil is high in polyunsaturated fat, which is a heart-healthy fat, and low in saturated fat. Extraction of oils from oilseeds is a key step for their commercialization. The extraction process has a direct effect on the quality and quantity of protein and oils obtained. Various methods like cold pressing, solvent, super-critical fluid and aqueous extractions are in practice for oilseed extr...

Extraction of oil from Jatropha curcas L. seed kernels by combination of ultrasonication and aqueous enzymatic oil extraction.

Use of ultrasonication as a pretreatment before aqueous oil extraction and aqueous enzymatic oil extraction was found to be useful in the case of extraction of oil from the seeds of Jatropha curcas L. The use of ultrasonication for 10 min at pH 9.0 followed by aqueous oil extraction gave a yield of 67%. However, the maximum yield of 74% was obtained by ultrasonication for 5 min followed by aque...

Aqueous enzyme assisted oil extraction from oilseeds and emulsion de-emulsifying

14 Regulatory, safety, and environmental issues have prompted the development of aqueous 15 enzymatic extraction (AEE) for extracting components from oil-bearing materials. The 16 emulsion resulting from AEE requires de-emulsification to separate the oil; when enzymes 17 are used for this purpose, the method is known as aqueous enzymatic emulsion de18 emulsification (AEED). In general, enzyme a...

Effect of Enzyme Pre-treatments on Bioactive Compounds in Extracted Tiger Nut Oil and Sugars in Residual Meals

Tiger nut oil is a novel oil that requires more research data on its characteristics. In this study, the oil was extracted using both enzyme-aided pressing (EAP) and aqueous enzymatic extraction (AEE) methods. Using enzymes as a pre-treatment prior to mechanical pressing increased the concentration of some phenolic acids and tocopherols present in extracted oils compared to controls. High press...
